Hi Folks,
Since making my last batch of beer (a Christmas ale) I've been thinking about making another dark, strong ale as I can't get enough of them at the moment and I know I'll need a good stock for December. Can anyone see any issues with this recipe:-
Batch Size 12L
Maris Otter 2.800kg
Amber 0.150kg
Dark Crystal 0.130kg
Chocolate 0.060kg
Roasted Barley 0.060kg
Torrified Wheat 0.055kg
Northdown 7.5% 20g@60
Northdown 7.5% 8g@20
Fuggles 4.3% 10g@10
I've never used amber malt before but I've heard good things, would this amount be noticeable?

Sounds nice Tom! Amber gives a nice dry biscuity finish, which I love. If you use too much though, it can become astringent. The most I have usd is 150g in a 23L brew, so 150g in 12L might be a bit too much. I would add a lot more crystal as well. But it's up to you.

Cheers LastSuppa. I'll take your advice and use half the amount of amber and up the dark crystal to 200g. I've been on the Old Peculier and Fuller's 1845 lately and I want to make something along those lines.
