Liquorice & Treacle Stout - I've been thinking about both liquorice and treacle in a stout for a while. This is going to be V.1 (proceed with caution) and next weekend I will do a V.2 (less cautious) with a lot more Treacle in it, somewhere between 2-5% of the malt bill.

Fermentables:
Pale Malt - 1990g - 70.3%
Flaked Barley - 280g - 10%
Caramalt - 280g - 10%
Roasted Barley - 125g - 4.5%
Chocolate Malt - 125g - 4.5%
Sugar, Black Treacle - 21g - 0.7%

Hops:
Centennial @ 60 mins - 17g
Centennial @ 5 mins - 9g

Copper Additions:
Liquorice Powder @ 5mins - 10.4g
Protafloc Tablet @ 15-20mins - Half a Tablet

Final Volume: 12 Litres
Original Gravity: 1.055
Final Gravity: 1.016
Alcohol Content: 5% ABV
Total Liquor: 19 Litres
Mash Liquor: 7 Litres
Mash Efficiency: 80 %
Bitterness: 37 EBU
Colour: 235 EBC

Water treatment to the Stout Profile in the GW Calc, added to the Malts and blended / Mashing in.
Mash for 90mins and Boil for 60mins.
Yeast probably just Safale S-04.

That sounds really nice! :D I've used treacle a few times years ago and really liked the results; never used liquorice though. Can't wait to see the pics. :D
If I had all the money I'd spent on brewing... I'd spend it on brewing!

Same here. I have used treacle in a stout, up at 3.7%. It was fantastic, the best stout I have brewed to date.

The recipe is very similar to the stout on the CBA website. I upped the malt a bit, dropped the treacle a bit and changed the hops.
I remember it being quite salty, not in a bad way. And that was without any water treatment.

just done a imperial stout with liquorice in it, im looking forward to the results! used liqourice juice sticks that i got from bristol botannicals

For work of a brew at home? You get some fairly intense liquorice notes from the dark malts in an Imperial when its young.

I'll get round to adding the pictures sometime!!

work mate, i was gentle with the liquorice sticks, just 330g for 6.5 barrels, its definately there but its quite restrained, im quite pleased with it and thats just at a week old, ive done a kilderkin for the winter ales festival to go along with my chocolate and vanilla stout entry, im interested how the powder compares to the juice sticks, i shall be keeping an eye on this thread :D

Juice sticks meaning??? That hard black stuff you could buy from the chemist as a kid (At least I did, I used to chew liquorice root too) :)

Quick questin RE the thermometer strip. Where did you get it from?? The one I have from a tropical fish shop starts at 18 degrees, your's has a much better scale.

try bristol botanicals, just got a kg of the stuff for 30 quid ,think its a couple of quid a stick, thats all youll need

Bottled 15th Dec ’10 with 30g White Sugar / 12 Litres, tasting plenty liquorice and hints of the Treacle still in there :)
