Perry, Pear Cider
Perry
A refreshing drink, found it had a mild taste (not as sharp as cider)
and was very enjoyable to drink a lot of! And with the pears costing 37p a can very cheap ! Great idea for if you have a spare demi.
4.5L of water
Teaspoon of wine yeast (or any you have knocking around)
3 Cans of Pears Halves in Syrip (410g cans)
1 Tablespoon of Cinnamon
300g of sugar (OG of 1.045 = 4.5%
or add more sugar till OG 1.060 = 5.2%)
65g white sugar for priming
*Add yeast and a 2 teaspoonfuls of sugar to a cup of warm(ish) water and leave covered for 10 mins
*Heat 1L of water in a large pan add pears, sugar, cinnamon and mash into a paste, simmer for 10mins on a low heat (SMELLS AMAZING)
*Add 3L of cold water to the mixture and transfer to a demi
*Add the yeast starter and top up the demi with water maximum 2intches from top of demi
*Apply airlock and leave for 10days or until fermented out
*Shake the bottle (Rock the baby) every so often to get the full flavour from the fruit
*Rack and prime with 65g of white sugar before bottling
*Drink after about 2 weeks.
There are alot of unfermentable natural sugars in pears so ur perry will stay sweet and you wont need to worry about back sweetening.
It has a beautiful pale colour and is so easy to clear. My first batch I made the 4.5% and was like drink fruit juice so I made some a bit
stronger and its a magical drink!

Sorry to bring this back after a month, but i'm definately going to try this! Was just wondering how it kept past two weeks, was that the minimum ageing time, or was that more a recommended best?

I've just finished the last bottle of my similar drink - started in April, Bottled in May, Drunk throughout the year until January - Still tasted wonderfully crisp and fresh.

I drank mine after two weeks becasue it was fizzy then...
this was an experiment and i really enjoyed drinking it but about about a month I found the flavour to go a little weak.
I'd definalty make this again but would have to add a little something just to give it a little "umpf"
Also I hold my hands up.... I use too much priming sugar I ADMIT it and the long I've left my brews the fizzier they get!
I think i should go back to basics and actual do some research on how much and what types of sugar to use!

I believe that adding sugar will decrease the taste. Next time I'm not going to add any. Lower alchohol but possibly more taste.

hmmm, interesting. Maybe I'll leave this untill April/May time to brew then, so I can see the results here. God knows I've got enough else to be putting on!

What would you think about changing 1l of the water for 1lt of pure pear juice? or should I just add more pears to displace 1l of water?

Sounds like a great Idea, I looked at using pear juice but was put off because I could only find tiny kid sized bottles!

Bottleing tonight. In the end I think I done;
3tins of pears drained
2 fresh pears
300g'ish sugar
.5l of lidl pear juice
tbs of cinn
heated
into 5l plastic bottle, filled with water, yeast.
I got an airlock and cork for this brew, never saw any bubbling from it though, i guess not a very good seal with the cork and bottle. The fruit stayed at the tp for ages but then went down the day before I put in another 5l bottle.
The taste is pretty light so not sure how it'll taste in a few weeks of being bottled, we'll see.

I'm looking to make a Perry to be ready for the summer. I like the idea of the recipe here. just a few questions
1: can I scale it all up to the usual 40 pints?
2: Does the flavour improve over time like apple cider and,
3: I have seen some pear nectar in Lidl at 89p a litre, is that stuff any good?

I used half a litre of that lidl pear stuff, my bottles should be ready for tasting in about a week, they are cloudy currently. I'm not too sure what they'll taste like, time will tell.
