ginger beer recipe

am looking a recipe for ginger beer,alcoholic stuff.any one know off any. and do you need to use malt extract,are can you use ginger,water,sugar and yeast.

-An alcoholic ginger ale, like the stuff you get in cans but alcoholic

or

-A proper ale with ginger?

yes am looking to make it like the new crabbies ginger beer.with a strong alcohol content

OK, my fiery ginger real ale was:

4400g vienna malt (but could use pale or lager happily)
600g crystal malt (this is a high % but IMO ginger needs sweetness or it is a bit too dry)

30g Aurora - 90 mins
500g chopped, pre-frozen root ginger - 10 mins and in FV.

Th idea with the ginger is you chop it into dice-sized cubes and freeze it overnight. You can remove it the next day and let it defrost of you like, so that it doesn't interfere with the boil. I added it in a muslin bag and then fished the bag out and added the ginger to the FV too.

This was not as fiery as you might expect with that amount of ginger, and i would happily push it to 750g or a kilo if it did it again. I was after something akin to Old Jamaica or Idris Fiery.
