Hi all,
Long time reader, first time poster. I've been reading the forums for a while to get homebrew tips. Great site!
I've got a load of Summit hops that need using up and I've been enjoying some fantastic Black IPAs (Summer Wine, Saltaire, Thornbridge) in recent weeks so thought I'd have a go at one of my own. Any thoughts, suggestions, amendments, etc. welcome.

Pale Malt 7 lbs. 3.1 oz 3260 grams 88%
Chocolate Malt 0 lbs. 5.2 oz 145 grams 4%
Roasted Barley 0 lbs. 5.2 oz 145 grams 4%

Looks interesting. I have never used summit and have no idea what they are like..................one thing is sure ...it won't be a "pale"

I've read mixed reviews of summit, some saying that they have massive graperuit and citrus but others saying that they can give off aromas not dissimilar to garlic and onion. Obviously I'm hoping for the former

Summit do have a very strong garlic/onion taste when young but this does mellow out after a few weeks to a nice citrus flavour. I've only used them once and never dry hopped with them, not my favourite American hop but I'll use them again at some point, probably for bittering with another citrus hop for flavour/aroma.

You need to go carefully with the dark grains for this style. Cascadian is the name for it in the states, have a look here. I've done 2 now one with just a bit of carafa and one using more (too many) roasted grains and a cold extraction (Brewing Like Americans in Brewdays). I would personally go with as little carafa special as you can get away with for the colour and a cold extraction unless you want a good hit of malt in there. Or
you could try Jamil's Evil Twin recipe which seems similar to the maltier end of this kind of beer IMO. Can't help you with Summit, never used them.

Thanks all for your comments.
As I've got a load of Summit to brew with, coupled with the fact that I've never used them before, I'm going to stick with my hop bill and see how it goes. If I end up with a horrendous onion tasting beer, then more fool me, but it's only a small brew volume-wise. And I'm into experimentation
In terms of the grain bill, I've dropped the roasted barley and added a touch of Caramalt. I've also cut down the Chocolate Malt as much as possible but still got just enough to retain the colour within the style guidelines on BYO.
Hoping to brew this within the next week or so; will report back on whether it's a success (or disaster)

Don't worry about the onion taste, it does vanish after four weeks or so. The taste it left was fine, just not my favourite of the citrussy hops, I wasn't trying to put you off!
I like the cascadian style, let us know how it turns out as it's definitely on my to-do list.

Currently half way through a 60 minute boil for this recipe and it's looking/smelling good so far. No sign of onion (yet) from the Summit but I shall report back once fermented and dry-hopped...
