single hop brew using Chinook

hi, i'm an AG brewer with just over 20 brews under my belt. i've so far not used Chinook and would like to brew a pale ale type beer using just this hop for bittering and aroma. does anyone have such a recipe that they could share or perhaps offer advice? i'm inspired to do this after drinking Millstone's True Grit which is a 5% ABV pale ale brewed using Golden Promise, crystal wheat and Chinook. regards john

I have never done a single hop chinook brew, but have used them as a late hop. They can be quite a powerful, bitter citrus hop. Check on the AA before chucking a load in the early part of the boil.

Hi
Oakham Ales (Peterborough) make a pale ale called "Chinook" that only used this variety.
I've not seen it for a while (maybe due to hop availability) but have tasted it from Cask and it was wonderful.

Google it and see what you can find.

thanks. AA is 13.6%. i'm thinking maybe 22g for 90 mins, 10g for 15 mins and 10g at flame out. i guess that i'm looking for an IBU of around 35 but not too sure about the timing of the later hop additions.

Assuming you are brewing a 23 Litre batch your bitterness with that hopping would be 40 IBU.

Personally I'd be inclined to reduce the early additions a bit, and seriously increase the late ones.

I don't like half used packs of hops either so I'd get the whole 100g in.

I'd go for.

10g @ 90mins
15g @ 15 mins
15g @ 10 mins
15g at 5 mins
15g at 1 min
15g @ flameout
15g Dry Hop

That would give an IBU of 37, and should be lots more aromatic and flavoursome. It all comes down to personal preference though.

thanks, that looks interesting. i spoke to the brewer a few months ago and he did hint that they added hops at several points during the boil. maybe this is what's needed. certainly worth a try.

its a good hop, i use it exclusively in my liverpool pale ale(when the bloody hops are available!) id go with steeves suggestion i put about 14g@90 28g@10 and a further 28g@ steep(for one hour, this is assuming an aa% of 12.5) on a 5gal batch, these figures have been rounded down a little from 396 gallons :mrgreen:

I'm surprised that no one has mentioned Stone's Arrogant Bastard. The Jamil Show podcast has made several attempts at it without 100% success, although they claim to be very close with something like this:

6 gallon batch.

OG 1.066

90% 2 Row
10% Special B
mash @ 148

25 grams Chinook @ 85 min
25 grams Chinook @ 45 min
25 grams Chinook @ 15 min
25 grams Chinook @ 0 min

I've done a lighter version at 1.055 and 64 IBUs myself, a bit heavier on the aroma hops, which came out quite nice.
