I think the choc malt is just giving it a nice dark colour mainly, theres not a lot of it in there TBH. I think a light crystal would be great. To strain this after the initial days fermentation I ran it through my MT, theres quite a lot of bits in it still so once its fermented out it will need a good dose of finings. Tastes good now, strong lime flavour backed up by a surprisingly mild ginger taste. I think you could definately afford to up the ginger powder on this .
