SWMBO was never keen on it and it had an 'accident' one weekend when I was away.... Well so she says....

My Cooper Dark Ale made a half decent 'Christmas Ale'... but next year I'll deffo try something a bt more adventurous :)

Cheers!

 Nice one, are you from Derby then or just showing your support to mighty Rams? ill be honest im not a massive football fan but im a proud Derby lad and like to show my support our team (even though were abit sh!te   )

yeah you defently want to be more adventurous with the xmas brew, the cinnomon and nutmeg really made it stand out.

escapizm wrote:Oh my god... Put mine on at the weekend and the smell was the best yet. My recipe is much the same as the thread originators with some slight twists.

6000 g pale malt
200 g crystal malt
100 g chocolate malt
110 g torrified wheat

34g Northdown 90 mins
12g Northdown 0 mins
35 g Challenger 15 mins
9g Challenger 0 mins

last 15 minutes added
3 , 3inch cinnamon sticks
1 tsp nutmeg
1/2 tsp cloves (cracked)
zest of 4 oranges
70g of ginger

The 0 mins hops are in an effort to get some depth, I read this thread on APA and got some good info on late hopping viewtopic.php?f=5&t=27701 so though id give it a go.

This one’s going in bottles as it may last a while if it’s a little special and not exactly a session beer
To elaborate on my previus post above i would use less cloves and/or not crack them as they are an overpowering taste in my brew, nice all the same but you couldnt have a session on it, ive still bottles left and given its quite strong (id say about 7%) it may be better next year. Also ginger was not really evident so more next time i think.

Hi Kev...

I'm not a massive footy fan either TBH more of a Rugby sort of bloke....

My Dad is from Derby and my mum from Sheffield... My brother now lives in Belper... We grew up in north Derbyshire/Sheffield area...

I lived in various cities since leaving home and lived in Sheffield before moving over to the Island...

I do support the Rams, had a season ticket years ago... although I've not been to a match for 3 years it still hurts a little when they get beat... lol

SWMBO bought me The complete joy of home brewing for xmas and there are a few winter.xmas ale idea in there...
its a good book but is heavily US biased.... eg. gallons are 3.8 odd litres not 4.54l...
all the best for 2010!
:D

Nervousness is a good sign means you're actually pegging yourself against a roper scale of quality rather than just being over-confident and that's the sort of attitude tha means you take compliments well and listen to adivce, genuinely one of the best festive beers I've had, proper Xmas but not so overpowering you wouldn't want another which is a hard balance to strike!

I made this last year in bottles and it went down so damn well. Lost this recipe but found it again and will make it again at the weekend for pressure barrel usage. Thanks again for this recipe, fantastic
