I hear Leedsbrew is planning on doing something strong a black on New years day, I might just join in on the brewday fun...

Probably the usual us-05 or maybe something with a bit more alcohol tolerance.

I'm obviously in three-minds about it... maybe I should tweak the Abyss a little, but I was thinking of it being different (might taste like shit!) :D

I like the look of the Abyss also, great name! The Jaggery and Date Molasses should leave some nice residual flavours too. :D

I once made an 8% IPA with 6% jaggery and it was a little too much (buttery flavour). Should work well in a stout though.

Been looking for some interesting sugars to try, but no luck in the local health food shops or supermarkets.

Have you used either before?

Jaggery should be fine at that percentage I reckon. It's got a really nice flavour but I reckon it can overpower a pale hoppy beer. Should add a nice complexity to a stout that will benefit from a long maturation period. :D
