What are some of the best British ale books for style and recipes? Would it be something like "A History of English Ale and Beer?" My goal is to make a nice British bitter and mild for cask conditioning. However, I am interested in your versions of porter and stout.
I have started to look at your guys recipe thread and noticed you guys like brewing with marris otter.

Yes, MO has been common in the UK for quite some time. But there are several pale malts available from reputable maltsters that are all fairly similar in performance/yield and flavour - for instance it takes better taste buds than mine to tell a brew using Optic from one using Marris Otter.jimmiec wrote:I have started to look at your guys recipe thread and noticed you guys like brewing with marris otter.

My homebrew club does a bulk buy and I can get a sack of TF Optic, so I will try some. Is the Halcyon malt any good? Also, what is your guys opinion of Pearl malt? For base malts, a club member uses it blended with marris otter and pale malt.
