SteamPunk Imperial Scottish Pale Ale

Next up is the trial of the Burton yeast along with my HopThang. Sadly i am a fair bit upstream of the brewdate. Nonetheless, one can dream. :D

The interesting part will be whereabouts my SG is on this second sack of Bairds malt. If i achieve the approx SG below(70% BHE) and say 1.012FG with the Burton ale yeast then i will be in for a balanced 6%+ IPA. If on the other hand my BHE climbs on this new sack then who can say?

One things for sure, its getting brewed as is and the final ABV is the unknown! The kilo of honey is going in regardless.

There is a part of me that hopes for a 85% BHE :twisted:

Mash Schedule: Single Infusion, Light Body, Batch Sparge
Total Grain Weight: 19.60 kg

Notes:

45ltr mash liquor 74 degree mash temp for 12 degree temp grain rest to be 2 hours
60 ltr sparge
40grmms of twice boiled oak chips soaked in Asbach brandy for 1 week to be used after 3 days fermentation. Keep in FV for 1 week
Add Honey on day 3.
0.5 oz of Nelsons,Green Bullet & Apollo to be used in HopThang circulate for 8 hours day before bottling.
1 oz of Simcoe to be used in HopThang, circulate for 8 hours.
carbonation to be 2.8 carb volumes

I think so, my wife said 'lots of Hops & grain' have arrived. I've placed a few orders to set me up for the year so i assume the Bobek are in there amongst it! Good call on HopThang, that'll be a video then. Brewings great it even forces me to learn new skills i.e how to upload a video, Youtube here i come! :)

I am still stuck in Saudi so brewing is only a mental exercise at the moment. Nonetheless i was reading 'wild brewing' again last night. SO much info and ideas in that book. Not as much as on JBK right enough. i will be treading the path of Solera soon. I plan on keeping two fv's full of blending beers. Its basically a no brainer when we brew the amounts and varieties that we do.

I managed to get home for a few days over Xmas before going to Azerbaijhan(4 days off over 9 weeks just isnae it) and in that time bottled a Belgian Wild Brew and managed to start the Solera(photos to be posted later). It is a combination of Belgian Golden Ale 5.5%, Bretted Belgian Golden Ale 6%+ Belgian Saison 5.5% a couple of RIS's varying from 6.9% to 10.2% finishing off the top up of the FV with approximately a 1/4 of the FV volume.

The fruit influences in the original beers are Apricots and Figs. The Brett C started working on it nicely and the addition of the dark malt influence is just what was needed going by the smell at the airlock. Dark chocolate addition around April and then split the original Solera onto a few kilos of dark cherries maybe July. Hoping for around 20 bottles of Xmas madness with monster complexity and about 9 to 11% Abv. I will have no way of ever knowing the true ABV. The other half of the batch will be the basis of the following years Solera. I am absolutely gagging to get home and brew the Steampunk IPA as some of it will be making its way into next years Solera. With time and distance i think i am going to have to up the game of the Steampunk. Bobek will have to make its way onto the field and i will keep the mash temp nice and high so that the Brett has something to chew on for next years solera. Happy days and mental exercise!

This Burton yeast is astonishing! It lagged for two days(huge oxygenation) and then exploded into life. Took a 1/2 pint off the bottom of the conical this morning and its sitting at 1.030 @ 14 degrees.

I was worried that the yeast would be repressed by the low fermentation temperature. When i opened to rouse i was happy and left it as is

Absolutely honking of hops which also surprised me as i expected the low temps to have muted them, not a chance! Thinking of Bretting and long term storage of 5 gallon of this. The brett'd 5 gallon will need a year at least for the hops to die down. Otherwise the offset of the balance between mouthfeel and hops will be to big. We'll see. :) Happy Days.
