Bellebouche, we're in a similar neck of the woods in France, I've tried PM'ing you a couple of times but no reply. Great looking, inspiring brew here, would love to bottle swap etc etc etc with other brewers over here - why you no reply?

Yeah, well... sometimes my arms bend back . It was a bit of a beast. Put in on some Nottingham yeast (a first for me) and it promptly climbed out of the FV. Made a mess. Had to put a blowoff tube into a demijon and it thrashed away for 4 days. Very active ferment. It's been quiet for a while so have put it in a warmer room to finish off. Had a cheeky sip before moving it and the prominent flavour is of the coffee. The pine is there... but very subtle.

2016 REBREW
Coming back to this post after a long time... twin peaks returns! My last batch from 2012 ran out after four years... so I rebrewed it last year - same ingredients... slightly tweaked
This time Vietnamese coffee... but still using it as fresh-brewed espresso... a far more astringent addition than cold-steeped extract or grounds-in-secondary.
and six months later... it's now drinking superbly well.
