Brewday 20th April - DL 6X clone

Post by inthedark » Fri Apr 20, 2007 4:28 pm

For my second AG attempt, I finally settled for DL's original recipe, substituting brewers sugar for the invert sugar in my book to match the revised edition. Also increased quantity of fermentables to achieve ABV closer to the pub stuff.

Wadworths 6X

Size: 23.0 L
Efficiency: 70%
Attenuation: 75.0%

Original Gravity: 1.043 (1.040 - 1.048)
=======================#========
Terminal Gravity: 1.011 (1.008 - 1.012)
=======================#========
Color: 14.9 (5.0 - 16.0)
===========#====================
Alcohol: 4.3% (3.8% - 4.6%)
==========================#=====
Bitterness: 22.91 (25.0 - 40.0)
=====#==========================

Ingredients:
3.43 kg Pale Ale Malt
0.33 kg Crystal Malt
0.5 kg Flaked Maize
0.3 kg Brewers' sugar
27.0 g Goldings (4.8%) - added during boil, boiled 90.0 min
14.0 g Brambling Cross (5.8%) - added during boil, boiled 90.0 min
5.0 mL Irish Moss - added during boil, boiled 15 min
1.0 ea Fermentis S-04 Safale S-04

Increased quantities of fermentables by 7.5% (x 1.075) to increase OG to 1043.

All went pretty well - I upped my CRS addition to 0.5ml/l but mash pH was still IRO 6.2. Sparged down to 1.008 as still not confident of my efficiency.

Ended up with about 20L after the boil at 1.055ish, topped up to 23L for OG of 1.048. Sailed way past my target with efficiency of 78.6% this time round! Just racking my brains to see what I did differently this time. :D
