Hi Folks Im planning to brew Wednesday and really dont know what to brew, I am thinking a 4% ABV ish pale, with Lager malt, Munich Malt and a touch of Wheat malt, What I really want is a smack in the face hop bill using Amarillo, Simcoe and Apollo.

I have done single hop brews with each in the past and they are all individually superb and distinct, hence I am at an impass over a suitable hop schedule I will be looking at a 90 min boil and have plenty of available bittering hops, also I have enough of each aforementoned hop to not need to worry about how much will be needed to gobsmack my taste buds :D.

Looking to brew 50 litres and have plenty of other hops available to add to the schedule if you think necessary (Citra,Cascade,Summit,NS, Galaxy etc)
I have two starters on the go WLP013 and WLP023 for two 25l brews but should have enough time to get another strain going before Wednesday.

All advice graciously accepted.

Ditch the pale hoppy idea and make a nice Mild or a Porter. :)

All three hops; Amarillo, Simcoe, Apollo.

A bit of calculating to do here. Half the hops at flame out. The other half split into three additions at 45 mins 30 mins and 15 each addition giving 20IBU.

That should give a massive flavour and aroma with a firm bitter backbone. :)
