Well I was going to suggest getting some Simcoe and making a Dogfish Head like beer but that is way over your O.G. specifications. I agree with the previous poster though, keep working up your own recipes, it's fun to make custom beers and sometimes it works out really well. I threw together a formulation for an English IPA and entered it into a very large local contest. I bet it has been years since I have made an English IPA and I ended up winning a first place stein, you just never know what might happen. Of course, my idea of an English IPA is also way over your required O.G. 

Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
