BIIIG APA

How's this looking for a monster APA? The idea is to dry hop with 50g of each hop and then bottle and forget about it till next summer...

Before someone points it out, I know APA stands for American Pale Ale and Galaxy isn't an American hop, but the brew is American in style so I'm happy. If it makes you feel better we can call it an Austramerican Pale Ale. lol

Woah, looks a beast.

Although Galaxy isn't American I think it has quite an American flavour so I don't think you've done anything wrong there. I'm going to use some in a American amber when I get chance with some Centennial.

I think S-05. Thinking a spray malt starter might be of benefit

Actually a starter with dry yeast is counter productive. The best way to go is to throw in another pack or onto the yeast bed of a smaller beer brewed with the S-05.

+1 on the extra yeast sachet, you should have no problems taking it to 11% :beer:

I think the beer needs to be drunk after a few weeks in the bottle,you will lose all that hop aroma after a few months.

Over here I believe I we would call that an American Barley Wine or at the very least a Double IPA. Very wise using some simple sugars; that will help you dry the whole thing out because if the beer doesn't attenuate you will end up with bitter pancake syrup, good luck. :D
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)

I'd say brew a Double IPA for crazy fresh hop aromas or brew an Imperial-strength ale for aging, but you'll probably be disappointed by combining those concepts. The aged beer would still be great, but not nearly as hoppy as you'd expect, thus sorta defeating your purpose I think. That said, I'd drink most of them fresh and put a few aside to cellar-age and compare in a year.

Maybe I'll drink 2 or 3 to satisfy the hop itch and then save the rest.

Just curious as I've never come across one before where I could buy a good example of an APA with this level of hoppiness? Fancy trying before brewing one day lol
