Re: Applejack
Strangely enough i am doing the same.
i made an on the rocks kit last year in May. It was nice, a little too sweet for me so in order to free up the keg i have frozen it.
Now mine was at 75 and i froze about 400 ml. got around a third back. so maths wize means this is around the 20% mark. Spells like a great cider and also tasts much drier then before. Am thinking i might do the same with say an on the rocks berry kit or another cider. Just make it to say 19 litres so it is stronger in the start and freeze half.
crystal clear and will be heafty if drunk in too large a quantity.

Re: Applejack
There will be lots of ice.
I have found that you get sbout 1/3 out of what you start with meaning that the liquid will be about 3 times stronger.. if you leave it too long then some of the ice will melt too. I guess you can freeze again and agsin to concentrate it but a dram of 20% is ok for me.

Bottling tomorrow. Tried a bit of the run off and it was rather strong!
Re: Applejack
I know hopped cider is on another thread but has anyone thought to make hopped applejack? Could be quite interesting.

I guess you coumd run off into a container then dry hop it. Flowers would be best i guess as pellets would turn the thing greenShaun21 wrote:I know hopped cider is on another thread but has anyone thought to make hopped applejack? Could be quite interesting.
Re: Applejack
I was thinking more along the lines of dry hopping the cider in secondry, filtering the hops out and then freezing.
I have a demijohn of hopped cider at the moment. Might just freeze 1 litre of it to get a small bottles worth and see how it turns out.

Remember though that everything gets more concentrated. Personally i think it wiuld be best to dry hop after the freezing.put the hops in a muslin bag and you will not need to filter.Shaun21 wrote:I was thinking more along the lines of dry hopping the cider in secondry, filtering the hops out and then freezing.

Re: Applejack
My only worry with this would be concentrating a fair bit of methanol in the final product, I wouldn't have too many of them since it could lead to a rather nasty headache..

From what I've gleaned off the net, if the original ferment wasn't at too high a temperature, and you didn't use pectolase, and you didn't go over 12%ABV, the amount of methanol is negligible to the extent that the concentration from a freeze distillation isn't anything to worry about - but keep yourself hydrated Just In Case
