Schneider clone WLP300 or 380?

Post by Piscator » Sat Jun 14, 2014 10:40 am

Thinking about doing a Schneider clone - my favorite Hefe by a long way.
None of the dried wheat yeasts have particularly impressed me so am thinking of trying one of the liquid yeasts.

Which would you suggest would be closest for a Schneider - I'm leaning towards 380 but haven't used either before so am open to advice.

Cheers
Steve

Hi - yes it was something I was considering, but I don't know of anywhere near me that does it. Do any of the supermarkets carry it? My Tesco and Waitrose dont :(

I've never seen it anywhere over here.

I've only found it on the shelf once before years ago and can't remember where it was.
Easily my favorite wheat beer by a very long margin - it's like having a big mouthful of cloves and gunpowder, I absolutely love it.

I'm erring on the side of WLP380 which is supposed to be more clovey than bubblegummy.

I haven't seen Schneider Weisse on shop shelves here in London (apart from specialist beer stores), but it's in a lot of bars. I also was amazed when I was in New Delhi on business and my hotel had it in the bar (admittedly about £8 for a 350ml bottle, and it wasn't in its best state, I did wonder if it was the real thing).

Anyway, places you can buy Schneider Weisse:
Beers of Europe: http://www.beersofeurope.co.uk/schneide ... e-original
Beerhawk: http://www.beerhawk.co.uk/schneider-weisse-original
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

Sorry to partly hijack this thread but I'm also going to be brewing a wheat beer. The pub I work in has a few bottles of Schneider that are about 8 months past their best before date. With a starter would this yeast still be viable?

definitely worth a try as you get to drink the luuuush beer first. i was gonna order a vial of wlp300 for my summer weissbiers, but now i'm hovering over a mass beersofeurope order of their full range with culturing yeast as the excuse. thanks everyone. sincerely, my bank balance.
be cool to hear how you get on with the 380 piscator if you go for it - how near you think it gets, etc.

You might need to step it up a few times, and the yeast won't be the healthiest, but I'd give it a go.

I think Morrisons do it.

I cultured yeast from a Schneider bottle the one and only time so far I made a weizen. Turned out pretty nice but didn't taste anything like Schneider.

My own opinion, after visiting the wonderful Schneider Weisse Bräuhaus in 2012, is that WLP380 fermented @ 20C will give you a closer favour profile than WLP300.

PS. Going back to the Schneider Weisse Bräuhaus in October \:D/
