Yeah I am seriously thinking of leaving mine until Xmas 2013 (20 months), because is not as though I'm short if homebrew!

I had a another bottle of this on Monday night and it's now in it's 13th month in the bottle!
It's really smoothing out now and is becoming dangerously drinkable too

I've got about 9 bottles left, so I'm thinking that it's maybe time to brew something similar soon, so it's got plenty of time to mature.
I will also bottle most of it in 330ml bottles instead of the 500 & 568ml one's that I used on this brew.

I had the last ever bottle of this the other night after 3 years in the making.

What a smooth brew that went down very nicely. It's was all about liquorice, aroma, sweetness, then bitterness. Absolutely no alcoholic heat, just dark rich heaven

It's certainly true, 'that the last bottle is the best'.

And I had the Last but one bottle of this last year!
bevvy_merchant has just posted on `Ditch`s Masterclass` that he `Found` some Coopers Stout that is 5 years old and still Very Drinkable!

Christ WA - 3 years old!
Had started putting a dozen bottles away on each recent brew to try and 'age' them a bit before tippling but the oldest surviving is only 8 weeks since bottling..... and I'm already having to resist the temptation.
Think I need to ramp up production!!

I always put 2 bottles from each brew away in a maturing crate in my garage and go back to them when the rest of the brew is long gone.
Sometimes they are stunning and others end up tasteless.
