I will be using 1728 soon, it sounds like a yeast that is good to use across a range of styles. I've not used WLP007, but does it differ greatly from S04? For stouts I have found that US05 gives good results. Is WLP004 worth the extra?

I''m not a huge S04 fan, but I have had good results with Nottingham, Munton's, S-33, Mauribrew Ale and US-05. I've never used Windsor for some reason, or any Mangrove Jack yeasts. Liquid-wise, I've used WLP002 and Wyeast 1469, both made nice beers, and I'm looking forward the WLP006 batch I'm currrently conditioning. !728 will be next, and Brewlabs Somerset 1, both in the fridge. Cost doesn't really seem to be a factor when you can get a number of brews from one liquid yeast pack, with not much work. Dry yeasts are good for those spontaneous brew days, though. And I do tend to brew on impulse when the mood takes and time allows.

WLP007 dries the beer out more. S-05 is a good choice for stouts, but I'd still go with WLP004 for a dry Irish stout. I have one planned for late January.

Bit of a yeast update. I'm really liking WLP006 Bedford Ale, in the first ale I've made with it. This could be a good house yeast for use in all kinds of British ales, I reckon. It seems to attenuate around 75%, but will obviously vary according to grain bill and mash temp, and it also seems to enhance malt flavours well and at the same time let's the hops really stand out too. The beer has lovely condition, is crystal clear and the head stays well too. I can see this yeast working across light and dark ales. So I'm with Bierhaus in liking this yeast a lot, on first impressions at least.

I split the batch and did half with Wyeast 1469 Yorkshire, which I've used before and is also really nice. It's much more malt focused, I think, the hops have been more muted with this yeast, but nice esters and malt flavour.

I've got Wyeast 1728 Scottish in a red ale that I'll be bottling this week, will be interesting to see how it compares with the 006, as a potential multi-style yeast.

My favorite by far is Hopback. Found for free at the bottom of Hopback Summer Lightning...It has its critics but for me and my water it's spot on. I've tried S04, US05, wyeast1469, Thwaites, BRY 97. Notty, Sheffield Strain and others.
I brew mainly happy pales and cannot find a better yeast. It's like clockwork for me...bang on 77%attenuation every time...ferments wort very quickly and drops like a brides knickers when finished. My clearest and best beers have come from this one..and doesn't strip hop or malt flavours from any brew

I've never seen a bottle of Summer Lightning. Had it on draught, but never a bottle.

I really enjoyed my first brew with Munton's, recently. Really good. The heads up from you and Seymour prompted me to try it, so cheers.

There are closer stores in Manchester city centre, apparently, I just go to shops as little as possible and never go out of my way! But I'll try and pick up a summer lightning next time I'm in town.

Having tried most of the dried ale yeasts and a good selection of Wyeast, Brewlab and White Labs, I reckon there's not much wrong with Muntons Gold.
