Hey guys. i am going to attempt a recipe i have which is a fruit (Strawberry) summer ale.

i have never done anything like this with fruit before, and i have a question with regard to adding the fruit to the fermentation vessel. i always thought that anything that comes into contact with the wort between the end of the boil and drinking, has to be sterilised. So, this recipe mentions adding frozen strawberries, but i was going to use fresh as this is what i can get hold of. How would i sterilise the fruit before adding to the vessel without losing any important flavours etc..

You can wash the strawberries in a solution of sod met.
You can also blanche them for a minute or so in boiling water.
I've never used strawberries but have done a few rhubarb beers without any problems.....I usually blanche it then freeze until needed.

Freeze them as it helps break down cell structure. Then heat in some water for 10 minutes at 80c to sterilize and add to fv when cool. It won't harm the flavour, they get more aggressive treatment when made into jam.
