what do you think yes or no
just ordered a biab kit a Tetley bitter clone
was thinking of roasting the grain for about 20mins
but will cool it down before mashing
don't know if it will do anything to the taste or not

Roasting the grains will denature their enzymes - if at any appreciable temperature for any length of time. If you roasted them all you'd get very little conversion in the mash.

You could roast a small quantity of them, if the remaining grains have enough spare diastatic power. Though it would take some practice/experimentation to predict the effects at all closely. It also would no longer be like Tetley, perhaps worse if you get it wrong, perhaps better if you get it right - it may be hard to judge unless you've brewed the recipe before.

imho best thing you could do to a tetleys kit is embellish the hell out of it. Its hard to believe they can use grains and hops and create such an awful beer from it and manage to sell it too??? tho i only ever saw it sold in the north east along with vaux offerings, I switched to bottled beers for a few years while living in tetleys country.

but if your a fan of the brew perhaps it may be best to brew the kit as recommended for the first brew, and save tweaks for subsiquent brews when you know what your after effecting a slight change in..

regardless enjoy the brewing and beer..

When I moved up north to Yorkshire 20ish years ago I drank hand pulled Tetley and it was gorgeous. It didn't have to travel very far from the brewery. Of course it was nothing like the modern nitro shite. It's still available on cask but it ain't from Yorkshire. As long as the kit is for the original beer then it's a good pint. But I wouldn't roast the grain.

Nothing wrong with lightly roasting a cup or so of the grain, but leave the bulk of it as is. As Kev explained, you will denature the enzymes, and just end up with unfermentable starchy soup.

well I went a head and did 200g of the grain mix its in the fv now
so got about 6-7 weeks before I know how it turned out

I'm just fermenting an ale where I have toasted some Maris otter, about 180C for 15 mins. I tasted a few grains after and it put me in mind of biscuit malt.
It was only a small percentage of the grain bill as you can see.

9.13 kg Pale Malt (2 Row) UK (5.9 EBC) Grain 1 89.5 %
0.40 kg Corn, Flaked (2.6 EBC) Grain 2 3.9 %
0.37 kg Caramel/Crystal Malt - 60L (118.2 EBC) Grain 3 3.6 %
0.31 kg Toasted Malt (53.2 EBC) Grain 4 3.0 %
