I'm planning on making the Greg Hughes Bohemian Pilsner. The recipe says single stage 65 degC mash - but in his book section on malts, he says that this malt requires a multi stage mash.
I don't want to do a multistage mash - will this be OK?

If you are really wanting to utilize this malt, I would recommend the mash proceed at 50 - 60 - 70°C with 1/2 hour protein rests.

It depends which Bohemian pilsner. The floor malted might need a protein rest but I've used the standard with a single rest.

Just to update.
I did the Ozzy recommended mash (my first decoction) and it has turned out great - at least to the boiled wort stage. The weather has been kind and I have had a nice, steady 12 to 13 deg C through fermentation (I just use an un heated room in the house - no fridge) and all looks good.
I found decoction mashing in an uninsulated lautering tun to be very easy to control (I did a 30 litre batch).
