Anyone interested in a winter warmer
Hi everyone
Based on the conversation started on the Jim's ESB brewalong thread, is anyone out there interested in doing another? Though it's summer, the nights will soon be drawing in and it will be time to think about brewing dark and malty beers.
I have to admit, I didn't have the time for the ESB or summer quaffer brewalongs but if it's a dark beer, I'm sure I'd find the time to do so. For dark and malty beers, I guess there's a lot to choose from but I was thinking of anything along the lines of winter warmers, strong dark milds, Burtons, American brown ales and maybe even porter or stout.
So what do you think? If you are interested, I'd love to hear about what style of beer would be best and what ingredients should be used. It would be nice if someone could come up with an extract version too or a beer kit mod to get as many people involved as possible.

I'd be interested in attempting to brew a darker beer - I've done a fair few pale ales recently so need to change for winter. My last attempt at a Vanilla and Bourbon Stout last year went terribly, terribly wrong so I'd be up trying for a darker beer/stout.

A strong dark mild would be good.
Here's a very tasty one I brewed earlier this year.
Mild Ale Malt 4000 g
Vienna Malt 500 g
Chocolate Malt 500 g
Crystal Malt 500 g
Flaked Oats 100 g
Black Malt 50 g
Fuggle Whole 90 mins 40 g
Golding Whole 90 mins 20 g
Cascade Whole 30 mins 25 g
Fuggle Whole 30 mins 30 g
Final Volume: 22.5 Litres
Original Gravity: 1.052
Final Gravity: 1.015
Alcohol Content: 4.8% ABV
Mash Liquor: 14.1 Litres
Mash Efficiency: 72 %
Bitterness: 49 EBU
Colour: 218 EBC
If enough people are interested then no doubt Rob at 'The Malt Miller' would make the kits up for us. He'd also be able alter the weights of the hops to enable us to get the intended IBUs. I think!!

Can I still add my Father-in-Laws ashes to the Brew?
He was added to my last `Winter Warmer` and they loved the Beer until I told them Mansel was in it!

Father-in-law ashes are completely acceptable in this beer.
Just checked the Malt Miller site. Seems he doesn't have any in stock at the moment.
The rest of us will just have to cope with brewing a sub-standard ale.

I think we should put father-in-law's ashes down as optional. What was the idea behind that then? Did you run out of black patent?

So what malts do you reckon should go om a winter warmer. I reckon it should be
Pale malt
Crystal (maybe some different shades to increase complexity)
Chocolate
Black malt.
It's not malt but some sugar wouldn't go amiss either

I got this recepie from a mate of mine, was drinking it at his over the summer, it was lovley, so i brewed it myself few weeks ago, tasted great when I keged
I think the flavours come from the Carafa III.

So far in the recipe ideas posted, I can see it's all English hops. What hops do you think we should go with?
I like the idea of bittering with something that gives off lots of blackcurrant (some say cat piss) like Brambling Cross, Bullion, Cluster, or Brewer's Gold.
For flavour do you think it should be something softer like Goldings? I've always liked the idea of using WGV but I imagine lots of people dislike them.
Just some ideas. Let's hear some suggestions

I've brewed the following recipe a couple of times and it's turned out to be very nice. It's not a dark beer, but it fits the "winter warmer" style in taste, being malty, a little sweet and has that warming alcohol glow required with feet up by the fireside on cold night.
For the extract and steeped grain guys, it's ready to go, but someone would have to do the conversion for AG.
I didn't dry hop my attempts as the original recipe said to dry hop 5 days before the end of fermentation; and I didn't (don't!) have a clue how to calculate that. Also I used S05 rather than the Wyeast 1056.
I imagine hops could be altered to suit peoples tastes, but it does taste good and despite the chinook, it's not bonkers hoppy.

1.8kg Golden Light DME
1.5kg Golden Light LME
28g Chinook 11.9% AA @ 60
