What's this in my cider
Got several demijohns of cider on the go using different apples I have collected and pressed. Using natural yeast of apples to ferment. Pressed some coxes apples a month ago and have this floating inside. Any idea what it is? Looks like honeycomb!

How fine was the mesh on your press? I get stuff like that with some fruit wines, and it's just pulp clumped and buoyed by the yeast.
If it smells OK that's probably what it is, and it will eventually sink (may need some encouragement)

Checked and smells fine - certainly no vinegary hint at all

I think if you look up keeving, your answer will be in there, somting like pectin jell and partials and co2 making it rise

i had a look and, although I can't find anything that really stands out as an answer for you, but I still say pectin jell, but I can say My 1st small batch of cider 7lts did what yours is doing but mine did not rise as a was drinking it as a refreshment, while I was making the rest of my cider

And while I think about it, while I was sipping my 1st 7lts, when I got to the bit that you wondering what it is. It did have a different texture/mouthfeel. I drank a bit of it but tried to leave it in the plastic fv while I siphoned out my refreshment.
