Has anyone got a tryied and tested raspberry recipe , the variety on line is huge. I’m open to all suggestions

Whatever your base beer is like wheat, kettle sour, basic blonde, add a couple of sachets of funkin cocktails fruit puree in when it reaches FG. You will need to use a lot : for a 20 L batch, I would use a minimum of 2Kg.

Last batch I made in August came out great. It was 3.7kg wheat, 1.56Kg pilsner and 170g carapils. 75min mash at 66c. Only 24g of tettnang at 60min.
5 days into the fermentation I dropped in 1kg of frozen raspberries. By the end of the fermentation all the colour had drained from the berries.
Came out at 4.3%. Oddly given the wheat content it poured near clear and crisp. The raspberry flavour was sharp in the first month and mellowed quickly thereafter so you need to get drinking whilst young.

The Raspberry Wit in Greg Hughes' book is good, if you're into that sort of thing.
Raspberry seeds can fairly block an airlock so what out for that, especially when combined with a wit type yeast (WLP400 I think I used).

I'm currently drinking a raspberry chocolate stout. The balance isn't quite right, the raspberry is too prominent and teh chocolate is too subdued. Heres the recipe if you want a starting point for something similar...

My tip is to go big time, if you are using just raspberries. I used 5k in 25 litres. The other tip is to put them in when the beer has completely finished. It will take off again and can be quite dry as a result so mash high.
