Any ideas on the water profile? Thinking balanced between gypsum / sulphate?

No idea what their water profile is, but they do acidify their sparge liquor to 5.7 to prevent pH going above this in order to stop tannins at end of sparge.
American beers tend not to be very minerally, so maybe go with 100-150 calcium, chloride and sulphates and alkalinity in the 20-60 range. I’d shoot for the lower end of 100 for chloride and closer to 150 for sulphates so you get that crispness from the bitterness.
