Lambic infection - when do they show?

Post by gobuchul » Sat Dec 01, 2018 3:09 pm

Well I brewed a Saaz lager 3 weeks back.

I kegged it today and a bit of a funny smell to it. Slighly "lambic".

I taste it and it didn't have a sour taste to it. Would it be noticeable immediately?

I've kegged it anyway and I am wondering if it's going to go sour while conditioning?

Did you see anything on the surface of the beer in the FV before kegging that looked odd? A lacto infection usually shows as a white film.

There was a bit of "gunk" on the surface, not a white film though.

I've been through the motions of worrying about infection way too many times. If it's not obviously infected - a film or a pellicle - it's probably fine. If you used a true lager yeast it will need time anyway, lagers are subtle and slight imperfections show up quickly
