Strong-ish Ale for Xmas
I've not been brewing nearly as much as I would like, but managed to get a brew on today. Forgot to take more pictures though
92.3% Crisp Extra Pale MO
7.4% IREKS Teak ( this is a dark crystal, 140ebc0 Not used it before)
hops- Admiral bittering 50g@ 60mins
25g admiral 15 mins
25g Admiral 5 mins
20g Homegrown hallertau mittelfruh 5 mins.
(I have loads of this so will be adding it to every brew for the next year I think )
should be about 50 ibus, will depend on how much AA the admiral lost in the freezer. will see, wort tasted bitter enough
S04 yeast, two packets
24l of 1.062OG wort.
Ran out of gypsum, so only added 2g of it to the liquor. So ended up replacing it with more calcium chloride and some epsom salt, this will be chloride forward I think. should still be fine
see the difference in colour between this years homergrown hops and the darker admiral that have been in my freeezer for over two years now I think They still smelled pungent enough, not as bright as the hallertau though
the boil about to begin
will report back when I taste it

my temp probe fell out of the water bath I keep the fermenter in, so it was heating non stop for about 12 hours. reached about 27 degrees as the water heater automatically cuts out at that point. At least it wasn't right at the start when the yeast is muliplying, but it could still get a bit fruity. Hopefully not ruined

Oh oh! My first homebrew I fermented jn the immersion heater cupboard, thinking a warm place would be good. The fusel alcohol produced gave me the worst headache I have ever had. Took about 2 weeks to completely disappear!
Not sure how warm it got, but probably warmer than 27C.

So I bottled today, had stopped the heater a few days ago to let it drop to 8c in my garage. Was really clear, no off smells or tastes, tastes a little green obviously but I'm well pleased with it at this stage. FG of 1.016 so an AA of 73 percent which is about right. Should be a good 6% beer at xmas. This is the very last 100ml from the bottling bucket, so has the e most sediment. Gives a decent idea of the colour at least.

Having a cheeky carbonation test
Should be a very pleasant beer in a few weeks. I think I have under carbed it though, I just checked the amount of sugar I should have used for the amount of carb I wanted and I used 100g instead of 130g. Which is a little disappointing but better than overcarbing at least I suppose. I blame this on not brewing enough
