Northern Monk Recipe Request

Does anyone have a recipe for, or any information about Northern Monk's Bombay Dazzler? My girlfriend thinks it was a great beer, but unfortunately, it's not part of their core range. I was sure I had found something a while back, but now can't find anything.

They might withhold some information about it but most breweries are happy to share, the days of recipe safeguarding are mostly long gone tbh.

Otherwise it’s probably a fairly standard wit - 50-50 pale malt and torrified wheat, 15 ibu, proper wit yeast and it’s spiced with ginger, cardamom and coriander - use them dry after the ferment ideally. Cardamom is a powerful little pod so go easy! Lol

Based on things I've gleaned this should be close...

Batch Size (L): 23
Original Gravity (OG): 1.050
Final Gravity (FG): 1.010
Alcohol by Volume (ABV): 5.2 %
Colour (SRM): 3.0 (EBC): 6.0
Bitterness (IBU): 12
Brewhouse Efficiency (%): 75

2.25 kg Lager malt
1.8 kg Wheat Malt
750 g Flaked Oats

12 IBU bittering hops @ 60 Minutes (Boil)
50 g Saaz Pellet (3.6% Alpha) @ 15 Minutes (Aroma)
15 g Cardamom Seed @ 5 Minutes (Boil)
15 g Coriander Seed @ 5 Minutes (Boil)
15 g Ginger Root @ 5 Minutes (Boil)

Yeast not sure - Wit yeast I think. Certainly Belgian.

Um, not sure how you'll get an OG of 1.050 from 4.8kg of grist. Especially as a big chunk of it is flaked oats. Graham Wheeler's beer engine suggests 1.044. Which seems much more realistic.

You may want to think this through before starting a brewday.

Yes - as always it would be necessary to adjust the recipe to match one's own efficiency rates, the potential of the particular grains used, the alpha acids of the hops and so on.

Though even with that, and with the recipe nailed to perfection, exact clones are challenging. There might be important things about the process that are unknown or don't translate well to homebrewing - or some exact ingredient (e.g the yeast) that wouldn't be available.

Which is not at all to discourage; it may very well be that (without commercial restraints and other people's tastes to satisfy) a home made version would be superior, even if not exactly the same.

That recipe is based on good information. By all means adjust for efficiency.

BTW, the above recipe is based on 75% efficiency, using Brewmate software, which I find pretty relaible. I usually get 80% myself. I don't often use a lot of an adjunct, like the oats. But the software will take account of the ppg expected from the oats, it's all factored in. I don't know why the Wheeler software gives such a different expected OG, is the efficiency set to 75%?

Clibit - the recipe you posted gives ginger root as an ingredient; I take it this is definitely fresh ginger? Also, should it be grated, chopped etc (I'm assuming it's not whole).

10 g Target (12.45% Alpha) @ 60 Minutes (Boil)
25 g Saaz Pellet (2.20% Alpha) @ 15 Minutes (Aroma)
15 g Cardamom Seed without pods, lightly crushed @ 5 Minutes (Boil)
12 g Coriander Seed lightly crushed @ 5 Minutes (Boil)
20 g Ginger Root (chopped finely) @ 5 Minutes (Boil)
1 Packet Mangrove Jack M21 wit yeast
