If you could choose one hop to brew with Nelson Sauvin what would it be?

OK I splashed out on some Nelson Sauvin, but I am shying away from single hop brews after several disappointments.

I've always loved Thornbridge Jaipur, but when I came across a pub serving it on cask in Buxton recently I was a little disappointed, as I had been over the years with my attempts to try to recreate this brew. Don't get me wrong some of my attempts have been magnificent but others just a bit meh! At first I thought it must have been variability in my technique, but after several attempts I thought maybe hops can vary from season to season. Although this is undoubtedly true I've come to the opinion that some hops just don't do so well on their own and NS is definitely one of them.

So I'm keen to know, because I've got a brew day coming up, what successes you guys have had in combining NS with other hops?

The single-hop NS brew from the Greg Hughes book is a cracker, I brewed it recently. It's now all gone and I want to use up the NS, but haven't got enough for a full brew, so need to combine it with something. Thinking about Chinook at the bittering stage.

It makes no sense to do anything but late hop with nelson. But any of the big American hops go well with it

Imo NS liked a dank hop to back it up, on its own it can be quite 1 dimensional, something piney like chinook or simcoe will help balance it out.

I was going to say Simcoe too.
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

The brew I've just finished drinking included NS as a late hop and also in the dry hopping.

It was a bit of a complex recipe. Using up ends of stuff! Here it is;

Brew # 156 Brew date 19/04/2019

Pale Malt 4000 grams 72.1%
Vienna Malt 700 grams 12.6%
Crystal Malt, Pale 450 grams 8.1%
Caragold 300 grams 5.4%
Flaked Oats 100 grams 1.8%

Motueka Whole 30 grams 75 mins 23.1%
Nelson Sauvin Whole 20 grams 30 mins 15.4%
New Zealand Wai-Iti Whole 30 grams 15 mins 23.1%
Pacific Gem Whole 50 grams 0 mins 38.5%

Dry hopped in the keg with 20 grams Citra whole and 35 grams Nelson Sauvin whole

Final Volume: 23 Litres
Original Gravity: 1.053
Final Gravity: 1.013
Alcohol Content: 5.2% ABV
Total Liquor: 38 Litres
Mash Liquor: 14 Litres
Mash Efficiency: 75 %
Bitterness: 41 EBU
Colour: 18 EBC

Thanks Guy, I enjoy Challenger and would like to try NS but was underwhelmed by a single hop commercial brew and therefore thought Challenger and NS combination may be ideal for me.

Hi Kingfisher

The recipe is nothing special. The method I use is to think of how I want the malt to be, and think of the hopping separately.
So for something with hops like NS I expect a nice fresh late hoppy pale ale.

So for me, a decent simple brew would be.
3.5kg Pale malt. Maybe a little more malt if i want it a bit higher or if your efficiency is lower than 85%. If so stick in another 500g.
200g Torry and 200g Caramalt.
For the hopping. I like a hoppy ale to be middle 30's Ebu, so this one at 37 Ebu is ok.
I've used Challenger a lot for bittering, and it works really well.
So allowing that i want to late hop at 15 & 5 mins and want to use 30g and 20g of nelson.
I bitter with Challenger for 60mins to around 16Ebu then add my late hops.
So 30g Challenger 60 mins.
30g Nelson at 15 mins & 20g Nelson at 5 mins, Totals around 37 Ebu.
1/4 Protofloc at 8mins. I used SO5 yeast and fermented at 19c.

Any of the American "C" hops will work well and Challenger.
i would go with Normski`s advice, but use the NS at flameout or dry hop.
Because NS is a very delicate hop, keep the IBU`s low, try to match the OG

I agree anything bittered with Challenger is smooth loveliness. My last few brews have all been started in the kettle with Challenger. Normally I would only use Magnum, but recently just loving Challenger.

Might give Chinook or Simcoe a go with Nelson too. Sounds nice!
