I think you should make sure that you like, out of the beer, whatever you want to add to the beer.
One of my best recipes resulted from a "Hey, this would taste good in a beer" moment.

Liquorice Root - An idea I have yet to try.
Hemp Seed - So far I've tried Roasted Hemp seed in a stout (Mashed with other grains), next I shall try Ground Un-roasted Hemp seed in the last 15mins of the boil.

Ooooh - being Danish I have a passion for liquorice, of course, and liquorice root is most certainly on my to-do list!
Does anyone know a general rule for what can and what can't go in?
... Apart from what is toxic to yeast, obviously, or will offset pH too much.
Say, are oily compounds OK (coconut, for instance)?

Oil is generally a bad idea as it will inhibit head formation/retention.
