Wild Elderflowers??

I always have a smell of the flower before picking, some do smell like cat pee, but others smell amazing, needless to say pick the "others" & you can't go wrong. Wonderful aroma in a light summer type ale :D

There is a slight difference between the two - the cat's pee ones are slightly more cream I think. Either way, go for the "others" :lol: (It's a very acquired taste - I'm not a huge fan of the badger peach or elderflower beers either, and elderflower wine will keep you smelling elderflowers for hours!)

Over on winesathome.co.uk they have a really good guie on making elderflower syrup. That way you can have a heap of elderflower and enjoy the taste in your beer all year round.

That's a great idea. They'll be a glut around here soon.
It would be good to have a bit of spring at other times of the year.

Today I'll be adding honey to my annual Honey and Elderflower ale today. I must confess though... I use dried elderflowers.

Woops! Just seeing this. Sorry John. Always go for 35g in a 25L brew. Boiled for the last minute. I add 450g of honey at secondary.
