It's the oil from the peel, so a bit of both I think. Couldn't make out too much the first time round but I kinda botched zesting the oranges, won't make that mistake this time Was using a cheese grater before, which just gave me some kind of orange goo, not much to soak in the spirit... also only left it 1 week, the recipe recommended 2.
