So, given I'm sipping one now and think it's pretty dam nice - any further information on the actual recipe? I'd settle for a hopping schedule, since the actual malt make-up doesn't seem that important somehow... :)

Hi folks. Unfortunately, this thread seems to have died a death. I'm going to attempt to make a rough 5am Saint clone using a Coopers kit. I'd appreciate some help from some experienced AG brewers regarding malt and hops.

my guess is there is a ton of crystal in there... way too much for my taste.

I was given the rough hop bill last time iwas in the dogpub for a pint. Sadly it was the 6th pint before i asked so i can't remember. Tell ye what, just for you guys i'll go back in and ask during my 1st pint. The bottled stuff is a pale shadow of the kegged. Sure they said a shed load of Galaxy hops, i know Simcoe were in there as well.

I'll do better. My mate and I are going for a dogtour round the brewery tomorrow. I will ask. Wonder how much hops they'll sell me? :)

Total co-incidence, mate txt'd me to see if i wanted to go for a run up to peterhead tomorrow 1 minute after my last post to pick up a load of peat and i suggested dogtour, how serendipitous is that?

I've had to put off trying to brew an 'inspired by 5am Saint' brew due to being unable to quickly get hold of any Simcoe. Oh well, I'll make something else instead this time round and put of that brew until the new Simcoe crop is in.

Isn't Simcoe suppoesed to be very Cascade-like?

It's quite a bit different than Cascade. Simcoe is definitely the signature aroma in 5am.

Question for mysterio, if you're around dude. How does this look for 5am Saint hop schedule? Anything you'd change?

15 mins - 25g Nelson Sauvin, 25g Amarillo (50g)
5 mins (and steep for 20 mins) - 15g Simcoe, 15g Centennial, 15g Amarillo (45g)
Dry Hop - 50g Simcoe, 30g Centennial (80g)

Sounds good to me, you really cant go wrong blending those hops.

Good stuff. Any adjustments you'd make? Too much of one hop, for example?

I've leaned heavily on the Simcoe, as per your advice above.

If you can I would balance the hops more evenly with your finishing addition although it will be good as is.

So more Simcoe all around you think?

Brewdog say on their website that only NS and Amarillo are used for bittering/flavouring. The Simcoe & Centennial are for the dry-hopping. As I'm doing a kit, I'm using just a bit of NS and Amarillo for flavour, hence the 15 minute boil.
