Two words for you: Montrachet Yeast.

Keep that our little secret, now.

28l at 1.075 might be on the margins of needing a second or part of a second packet of US05 particularly if you were fermenting at 16 degrees. Its difficult to call that sort of thing though because we have all had brews like that where one pack has coped...
Very true. There's a thicker yeast head on it now and the air lock looks busier. Reckon it's doing the trick! :-)

   Sweet! Great that I can do these things as a humble homebrewer. They aren't the most expensive of hop varieties so I just thought... f*ck it! :-)

Hope it will be drinkable. Even for a hop head like me!

I SAID SHHHHHHH!

Single-cell organisms don't know the difference between beer and wine. I assure you that's entirely a construct of human psychology. Any and all yeast simply consume whatever sugars you give 'em, sometimes in very cool ways. Now trust me or don't, but pipe down!

Haha. I worry it will leave it dry. You see... in an ideal world, this would finish up at the 1.013 mark. I hate dry IPAs...

On another note, I just dry hopped with 200g! Put them in a giant hop bag weighed down with 2 500g glass candle holders. 3.5 days is all it's getting. I don't want any grassy flavours. Will gently prod the bag every 12 hours until Sunday morning then will give it a good old squeeze. Bobek smell more pungent than the Aurora. Should be interesting...

Accountants have been killing beer for too many years, like you say, "bugger'im".

Haha. Free the hops!

This beer is not for the faint hearted. I've only had a sip or two from the hydrometer glass (Still at 1.016) and it's pretty damn pungent. I'm getting lots of lemon... i think!

It's in a jerry can now carbing up. I added 20g of sugar and tightened the cap. Plan is to bottle it already carbed so I don't have to worry about sediment in the bottles.

This beer is still way too young to drink - I reckon it needs another 3-4 weeks.

All in all, I'm confident that I'll enjoy this beer. :-)

OK... this is starting to come into its own now. I'm sipping a half pint. Massive citrus - orange being the main flavour. Tastes like intense orange ice pops/lollies. Lovely bitterness level now and a gentle alcohol hum in the background. It's one of those beers you want to roll around your mouth for as long as you can before swallowing. Boys, she's an absolute beaut!
