Thats what i was thinking. I will go with the saaz and kolch yeast. ferment it at 18 maybe lower if i can.

I'd go for steam/calofronia common yeast and ferment at 15 degrees. Without temp control I'd just use an ale yeast.

On white labs web page it says that the optimum ferment temperature is 18-20 something degrees. And won't ferment well below 16 so with this yeast I don't think temperature control is all that important. I just fancied using it because of its lager like capabilities and because I wanted to try a liquid yeast. Up until now I've only splashed out a couple quid on the dried packets haha!

Well for whatever it's worth I personally hate to bitter with really low alpha hops like Saaz because you end up with alot of vegital matter in the wort relative to the bitterness you get out of them. I like to bitter with Magnum for lagers personally, they give a decent bittering which is smooth (with the added bonus of being cheaper). :D
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)

I've been looking at kolch recipes and virtually all don't have late additions. I feel it might be too bland without something thrown in at the end however because its for my dad I've revised the recipe again to something like this

She's in the fermenter bubbling away. The yeast absolutely stinks, I can see why they call it arse yeast

What does he like to eat? You could do a beer with a small bittering charge and finish with some spices. My house ale is a recipe that started with my wife and I eating some lemon-rosemary chicken and us wondering how the combo woud taste in a beer. It's even good with 34/70 fermented at 10.
I'm just here for the beer.
