He didn't comment on using such a high percentage of malted oats as his recipes currently only use small amounts.
The reason why the oats are malted (husks still present) is because due to the manx purity laws, un malted adjuncts are strictly 'verboten'.... lol
It's similar to the German purity laws but allows cane sugar and inverts, but un- malted grains and other ingredients in place of malted barley or wheat are not permitted. It was amended in the 1990's to include fruit and a few other things... But otherwise does not permit such things as rolled oats or 'grains prepared in any other way than malting'...
Just another example of the idiosyncrasies of the 'Island'....
