Have you considered spliting a batch between two fermentors? This would not only help wih the ferrocity Of the krausen but also mimic the geometry of the shallow open fermentors used in traditional German wheat beer brewing!

I have a very good formulation for a normal heffe which has done well in competitions but have yet to make a decent dunkelweizen so I'm paying attention to this thread.

I have noticed that I tend to do better with regular heffe if I get more clove which of course means fermenting at a lower temperature (I assume the same would be true for a dunkel). Sounds like you are having a really hard time getting the wort to cool fast. I am currently using a counterflow chiller with a pump. Here in Texas it gets very warm in the summer so the ground water is also hot (right now we are getting highs in the 90's). What I do is use groundwater to get the wort to about 80F or so then use a pond pump and start pushing ice water through the chiller and get the wort as cold as I can. I always do that with lagers but when it gets really hot I also use the pond pump for my ales. Anyhow, you can pick up a new pond pump cheap at gardening stores and the like, maybe it will make your life easier. Incidentally, the faster you can cool the wort with late hopped beers, the more aroma you can trap so this gizmo can actually improve the taste and aroma of you beers.

Yes. To get down to 11oC etc pitch you need very cold mains water for an immersion chill..
When it's that cold outside thoughts turn to lagers, they should turn to alt biers.

Or use an icebath prechiller coil for the cooling water towards the end - works well.

That is a very good idea. I have my IC for my smaller buffalo boiler that I could sit in the buffalo with iced water in on its way through....
