Day 1 in the Big Brewery House - Jim is in the kitchen, looking at his (and Ditches) creation. It's all a bit frothy......and that is a bit of an understatement......and that is.

I did use a Krausen collar though so I wussed out a little bit.

Not that I am scared of the missus of anything.

Heat of fermentation ....? I'd be truly intrigued to hear how one of those collars can handle an all out, 21C evoked Spew.

There! Now she can't sneak in, behind ye back, and delete ye post while denying all knowledge of what she said!

Have ye got a heater in it, mate? Because, seriously; Bang it out at 21 C or so and ye bloody well need some protection! I know it's good craic and all that. But, having ye flooring soaked in beer? Not funny!
Ha, ha I found this out the first time I made it. From the second brew onwards, the FV now stands on a plastic dust sheet. BTW, I always find that my 'Stout' comes out resembling 'Old Peculiar', which is fine by me.

Yeppers. Ye not the first to say this. In fact, as it happens; When I was into my 'Real Ales', and able to source them on a nightly basis? Old Pec' was my favourite.

But, that was over twenty years ago. Now, I've returned to the fold and have pretty much reintroduced myself with a recipe which hits my nail on the head. And which others ~ by now better qualified to judge (I doubt if I'd remember the taste of Old Pec', if I could get at one) are now comparing, favourably, to Theakston's Masterpiece.

This sits well with me!

Ok - 39 bottles of stout awaiting Christmas - although I was drinking it out of the Fermenting vessel which goes to show how nice it is.

It might be a bit early but Happy Christmas.

So, what do you reckon to it if you brew it as the instructions? I want to try this recipe but have to say it's good without any adjustments

Then I have to say it's even better, my way. One or two people appear to agree. But, each to his own, Sim' .....
