23.03.08 - Kinda Deuchars Clone

Yesturday saw me making a version of this excellent IPA (though some may say it isn't really an IPA, still, it's very nice.)

Here's the recipe -

Deuchars IPA
India Pale Ale

Type: All Grain
Date: 23/03/2008
Batch Size: 23.50 L
Brewer: Steve
Boil Size: 20.95 L Asst Brewer:
Boil Time: 60 min Equipment: Brew Pot (5 Gallon)
Taste Rating(out of 50): 35.0 Brewhouse Efficiency: 75.00
Taste Notes:

Ingredients

Amount Item Type % or IBU
3800.00 gm Golden Promise (5.0 EBC) Grain 92.68 %
125.00 gm Wheat, Torrified (3.3 EBC) Grain 4.88 %
100.00 gm Caramel/Crystal Malt -120L (125.0 EBC) Grain 2.44 %

Hops -
55.00 gm Fuggles [4.50 %] (60 min) Hops 22.1 IBU
14.00 gm Aurora (Super) Styrian Goldings [8.60 %] (10 min) Hops 3.9 IBU
85.00 gm Aurora Styrian Goldings [8.60 %] (30 min rest)

0.31 tsp Irish Moss (Boil 10.0 min) Misc
1 Pkgs SafAle English Ale (DCL Yeast #S-04) Yeast-Ale

Beer Profile

Est Original Gravity: 1.041 SG
Measured Original Gravity: 1.010 SG
Est Final Gravity: 1.011 SG Measured Final Gravity: 1.005 SG
Estimated Alcohol by Vol: 3.96 % Actual Alcohol by Vol: 0.65 %
Bitterness: 26.0 IBU Calories: 90 cal/l
Est Color: 9.8 EBC Color: Color

The day went well 'till it came to the sparge where it decided to stick after collecting around 3 gallons.
So, after shaking and stirring the stuck mash it slowly dribbled out to around 5 gallons.

I checked the SG and it worked out to be around the 2.9abv mark, not good. So, I decided to boil it down to 4 gallons which has raised it to an sg of 1040. Once finished it should be ~4% which is a little high compared to the proper Deuchars but I doubt anyone will complain.

The aroma from the Aurora is sublime, i'm really looking forward to quaffing this lil batch.

Sorry, no pics as the camera battery was flat.

Having tasted the real thing it wouldn't surprise me. It's got a real hoppy nose  I've also got some Aurora lying about and a Deuchers IPA is on my to do list. Be interested to see what you think of it come quaffing time Steve.

I'll be interested to hear how this turns out, i'll have to buy some Aurora. I reckon the massive amounts of hops while chilling is the way to go with this beer, good Deuchars has a very perfumed aroma. I reckon they must either use a hopback at the brewery or throw in loads of fresh hops at the end of the boil.

It should certainly smell the part! Needs a few more grav points, triple the IBUs and 6 months in a barrel before it can call itself an IPA though

Cheers for the comments guys. It smells wonderful, I like the smell of this aurora so much that if I had a garden i'd grow some

Will keep that tip in mind DaaB as i'm sure to have another stuck mash at some point. Think I'll cut the slots in the strainer a bit further into the copper pipe.

If this ends up tasting as good as it smells I can see it becoming a regular in my house.

BTW, my 2nd AG, the complicatd Dark Bitter is looking, tasting and smelling good too. A lovely light coffee flavour followed by a good dose of hops (at the moment it's mainly the late hops - goldings and cascade). Mouthfeel is strangely thick, definately in a good way. It certainly isn't what I was expecting but I'm glad how it's turning out.

As a flavour update - A mate of mine (who's house the beer is at) says this reminds him of Flowers IPA. As I've never tried that beer I can't comment but he says it used to be his favorite, so it musn't be bad.
