Newbie yeast question

Hi,

Just on my 5th brew a Woodford's Wherry, which I decided to use S04 yeast on & was wondering if the larger quantity of yeast (11g as opposed to the kit supplied yeast of 6g) would speed up the fermentation process.

I only ask, as in the first 24hrs, the bubble airlock was throwing out CO2 every second or so. I'm now on day 3.5 and there's almost no activity on the bubble lock (instruction guide say 4 to 6 days).

I'm using an ATC800 (set at 20c) for heating only at the moment but my max/min thermometer in the garage hasn't gone about 21c, so I don't think it's temp related.

I'll get the hydrometer on it tomorrow (day 5) but throught I'd check first, before disturbing it.

SO4 is known to be a quick worker . . . . In the commercial world it is possible to pitch and have it finished in 36 hours (for a 1.048 beer) . . . but then you are pitching 100g per hectalitre (1g per litre) which is just over two sachets in a 25l batch

Think I'll leave it an extra day, then check it out with a hydrometer.

Checked it with the hydrometer last night & the gravity was right on the 'button' at 1014 :wink:

So I'll give it another day, just to make sure but there's little or no activity from the bubble, so I may just move it to the secondary keg tonight.

On thing I did notice about the S04 yeast, is that it settles out really quickley (as well as it's fermenting speed).

So all in all, I'm reasonably pleased with my first use of S04 :D
