The colour of the head depends on the grains the kit makers used. Guinness' head is white because they use roasted unmalted barley.

Rinsing soap properly from your glasses helps & especially using nitrogen to serve stouts as for white head i have read that Guinness filters there beer to achieve the white head

As Rab said, rinsing all your kit (and glasses) thuroughly helps.
Don't use a dishwasher for your pint glasses, the rinse aids destroy head retention.

If you want, you could purchase one of the heading additives for the beer, like "Creamy Top" or Brupaks PGA, following instructions with the product. It won't change the colour, though. :)
