Made up a recipe for "Exmoor Ale"

Post by smp465 » Sat Nov 29, 2008 10:28 pm

Being Westcountry born and bred i have fancied having a go at an ale i was "brought up on" for a while. I have brewed the Exmoor Gold recipe from Grahams book a couple of times, but like the idea of cracking this one, it's a good pint!

Couldn't find much about the recipe apart from the notes on the Exmoor ales website. I've used amber malt due to the biscuit flavour mentioned. I'm sparging this now by the way.

4000g Maris Otter
400g Amber
50g Chocolate
66°C - 90mins

I have to say this is looking way too dark, and i think the amber is to blame. It said 100EBC on the packet and i put that into Beersmith where the amounts used here still gave the "chestnut" colour required. I'm not sure i believe that number now as the amber looks quite a bit darker than the 120EBC crystal i have! Anyone else used this dark amber malt, i got it from HopShop? I'll try and get some photos of the colour so you can see what i mean.

It looks like i will be getting a quite different beer from the one planned. I will be keeping the planned hop schedule to see what happens.

Challenger (90mins) 12.3IBU
EKG (90mins) 7.1 IBU
Brewers Gold (15mins) 8.1IBU
Styrians (15mins) 4.7IBU
Styrians at flameout 15-20g

Liq yeast hasn't arrived, so using Nottingham
Drinking: Double IPA (Mr President Clone)
Drinking: London Porter (5%)
Drinking: Belgian Dubbel (8%)
Conditioning: West Coast Red (5.6%)
Conditioning: Nelson & Friends Series No.1 (Mosaic)
FV: A few spiders
Planning: Everything else!
