Hops in TTL

Hi, I was planning a brewday for sometimes next week and I have been reading about the TTL, which seems to be getting very good reviews from everyone.
One of the recipes I found calls for these hops for a 23L batch:
40g Styrians (90 mins)
30g Fuggles (90 mins)
15g EKG (15 mins)
A lot of people also suggest that adding more Styrians at flame-out is a good idea.
My questions:
1) I don't have any Fuggles around (I only have EKG, Challenger and Styrians at the moment), so I was wondering if I could replace it, without affecting the final result too much (I am new to this and all the various hops and the ways they affect the flavour of the brew are still a bit of a mistery to me).
2) how much styrians at flame out?
3) I was planning to use S04 that I have already here. Is that ok? I am not too interested in creating the perfect clone, I just want to brew a nice beer. :D

I did this last month, although it's not exact, it is a very good beer, I added 35g of Fuggles and 32g of Aurora at 0 mins, they are also known as Super Styrians, this was a 60 litre batch, there is quite a good aroma from these, so for your 23 litres how about maybe 20-30g of Styrians at flameout.

S-04 should be fine for this brew, add more Styrians instead of the Fuggles if you haven't any.

There's one thing I am not too sure about: how much aroma does a certain type of hops give, when it's added at the beginning of the boil. I would have thought that hops boiled for 90 minutes would only give bitterness, and no aroma, as all the nice smelling molecules would have been stripped away from the wort by the long boil. So why do certain recipes call for different hops at the beginning of the boil? Wouldn't it be simpler to add some high AA% hops and save some money? Or am I missing something?

Consider if you're putting 200g of dried Fuggles in at the beginning and boiling for the full length, then tipping these hops out at the end when they're rehydrated. They could literally fill a bucket, so there's no way you're not getting some flavour carried through to the beer, even though a large chunk of it will have been lost. If it was a high alpha variety like Target, you would be using a third of that amount, so there would be less flavour. It's especially noticeable in pale lagers, if you use some 3% hallertau for bittering only, then the beer will still taste strongly of Hallertau.

I suppose theres an argument that you get a more refined bitterness from using a higher quality hop like Fuggles or Goldings for bittering. I'm not so sure personally, like you i'm inclined to save my best hops for aroma at the end of the boil and throw some high alpha stuff in for bittering, especially with the hop prices at the moment. I've been doing it recently with some 8%AA NZ Hallertau which I got for cheap, used it in loads of British style beers and finished with Styrians or Goldings.
