Whitbread's London Porter ...Sort of
Brewing today, 46lt batch of whitbreads london porter but I dont have the right hops so am using a mish mash of what I have to get the right IBU, 74g Pearl at 6.89% 61g pilgrim at 11.4% and 8g cascade at 7.3%. As it is all full boil bittering hop I am hoping it will work out ok. I am not bothered if it tastes exactly like the real thing as I have never tasted it but I am hoping it turns out ok. Other than the hops I am using the durnden park recipe. Think I will pass on the 3.5 hour mash and just mash for 9 minutes at 66c.

Whats the benefits of a 3 hour mash? Does it mean you can more sugars out the grains, therefore a higher alcohol %?

I always gathered that once the starches in the malt have been converted, there is no benefit to extending the mash time in terms of increasing the gravity of the wort. But I might have misunderstood.

That's true. Prolonging the mash allows more of the unfermentable dextrins in the wort to be broken down into the more fermentable maltose sugar. I don't think I want a overly thin porter anyway so I am happy with 60-90 minutes.

All went well, 1060 FG S04 yeast used, should be nice.

I loved this after 6 months. One of my best ever...soooo tasty.

Glad to hear that but this one will not last 6 months, It will be lucky of it makes it though Feb before I start drinking it.
