Some Stout Advice Please

As the wife has three church services to attend on Sunday I need to get my A into G so I can go ahead with my plans to do a Stout whilst she is out enjoying herself! I have been a huge fan of Draught Guinness for many years but I don't drink it anymore because the nitrogen in it (and all other nitro beers) makes my head hurt.
I want to do something pretty similar but with my own 'signature' to it. I could do with some advice on the following please:-
1. Although I have seen most of the % quotas regarding pale malt/flaked barley/roast barley etc I am thinking of substituting some peat smoked malt for part of the pale malt. When I walked past the St James's Gate Brewery I got a whiff of something distinctly smokey/burnt. But I have never used peat smoked before so I don't know if I'm barking up the wrong tree. If I do use it does anyone know how much pm I could replace with the peat smoked without it tasting like the bottled version?
2. Does anyone know if there is still enough yeast in a Guinness bottle to make a yeast starter and if not are there likely to be any other bottles at the local supermarket tonight that I could use?
3. Regarding hops, the only varieties I have in abundance at the moment are Challenger and Bramling Cross although I do have about 30 grams each of Fuggles, Cascade and Brewers Gold. I am thinking of using the Bramling Cross up in the stout as I have no other recipe coming up where it is used.
Any suggestions would be greatly appreciated.

I'd be careful of using peat smoked malt, i haven't personally used it but i have heard that its pretty potent stuff so best to err on the side of caution and add a little rather than a lot.

I don't think there is any yeast in a guiness bottle, i think its pasteurised and filtered. You could maybe consider some white shield yeast which was highly regarded back in the day when a lot of homebrewers used guinness or whitesheild (dave lines time).

The bram X would be fine it it since stouts aren't really about the hop flavour and hop additions seem mostly to be bittering only. That said though i would probably go for the brewers gold if it was me.

Thanks for the advice Delboy. Bit ironic you being in Carrick. My mother was from there and I went across last August for the first time since 1970 to see the rest of the family. I certainly saw some changes since my last visit. Not least the loss of a couple of boozers I used to go in. Still, I am digressing.
If I get no more tips between now and Sunday I might risk about 250g of Smoked at most. Sounds to me as if it may be like wheat malt if you put too much in. But Draught Guinness ain't what it used to be since it went Nitro, and I am trying to cast my mind back nearly 40 years to what it was like, when they generally referred to it as Porter and the Double X was a bit like draught liquorice.
I'll give it a go with a mixture of hops I think, using the odds and sods I have as well as the Bramling. I only bought the Bramling X to make my father- in -law some Barnsley Bitter at Christmas and he never supped any!

You could always try a 'Hop Back Entire Stout'
