High Gravity Dry Ale Yeast

Post by hobbit » Thu Aug 13, 2009 3:30 pm

Hi All,

I am wondering which yeast would be best for a kit such as "Muntons Premier Gold-Old Conkerwood Black Ale" with extra amber LME, some candy sugar (and some Northdown hops)to take it up to 1.075/80 OG. I would like a FG of 1.010 giving a ABV of about 8.5/9.0 %. I am hoping for a medium/strong hopped beer with a strong dark taste but without that sweetness often found is strong dark ales. I know that the yeast will need to cope with a 9% ABV but also produce the correct flavours for this type of beer. I was thinking

[1] SAFALE S 04 Yeast maybe two packs and some yeast vit
[2] DANSTAR WINDSOR Ale Yeast
[3] DANSTAR NOTTINGHAM Ale Yeast (yeast vit, two packets and plenty of aeration)
[4] SAFBREW T 58 YEAST

I am sure there are better ones, I am no expert so any advice would be much appreciated.

I'm not that well up on other yeasts, but from that list T58 will best cope with the alcohol and is said to give a fruity flavour. SO 4 is next in line for the same reasons, but to a lesser degree
