Gruit recipes - or what to do with a lot of sage

So since the sage is attempting to take over my garden and possibly the world I am thinking of striking back by turning it into gruit ale. I know sage has preservative qualities but am not sure what would be needed to balance the flavour. There are a few recipes at gruitale.com but I'd rather use ingredients I can find easily (nettles I can get in the garden, juniper berries I can get in the supermarket - stuff like sweet gale I would have to order and would be pricey). What I can't find is the information on gruit ingredients I would need to build a balanced beer to my taste. For example I don't want it too sweet, so I want to know what to put in to ensure sufficient bittering. Does anyone know where this kind of info is available?
