Evil Twin Recipe.....

Hi All,

I am just mulling over what AG brew to do next, I recently came across this recipe for "The Evil Twin", and as I do love hoppy beers this sounds really tempting.

Has anybody here made this brew? and if so how did it turn out?

One Question though Why are there two Crystal malt additions 40l & 120l ???

12 lb       (5.44 kg) British Pale Malt 3L
1 lb         (0.45 kg) Crystal 40L
1 lb         (0.45 kg) Munich Malt 8L
0.50 lb    (0.22 kg) Victory Malt 25L
0.50 lb    (0.22 kg) Crystal 120L
0.25 lb    (0.11 kg) Pale Chocolate Malt 200L
0.5 oz. (14 g) Centennial pellet hops, 10% alpha acid (20 min.) (6.4 IBU)
0.5 oz. (14 g) Amarillo pellet hops, 7% alpha acid (20 min.) (4.5 IBU)
1 oz.    (28 g) Centennial pellet hops, 10% alpha acid (10 min.) (7.6 IBU)
1 oz.    (28 g) Amarillo pellet hops, 7% alpha acid (10 min.) (5.3 IBU)
1 oz.    (28 g) Centennial pellet hops, 10% alpha acid (0 min.) (0 IBU)
1 oz.    (28 g) Amarillo pellet hops, 7% alpha acid (0 min.) (0 IBU)

Yeast: A clean neutral yeast that attenuates in the mid-seventy percent range is perfect. White Labs WLP001 or Wyeast 1056 American Ale are excellent choices. A good dry yeast option is Fermentis Safale US-56. Ferment at 68F (20 C).
Directions: Single infusion mash at 154F (68C) using a ratio of 1.3 quarts water to 1 pound of grain. While you could go with a shorter boil, the 90 minute boil enhances the blood-red color. It also adds a touch more melanoidin and caramel notes. Cool the wort quickly after the last hop addition to retain as much hop aroma as possible. Optionally, dry hop with more Centennial or Amarillo if you’re a real hop monster.

I brewed i close approximation (see below) to that for last Xmas, it is one tasty brew!

You can get different Crystals from most good HBS, each give a slightly different toffee/caramel etc balance. Victory malt is the tricky one for UK brewers, and thats where my recipe became an approximation as i just increased the crystals to give the same colour. You can use Amber Malt in place of Victory i believe, another brewer on here "Jubby" used that i believe?

Anyway, would recommend it, and the red colour makes it a good choice for Xmas.

I'm with smp465, it's a great beer. Loads of hop and grain flavor, one pint is enough for me though (well...maybe two) as it's a bit 'big' if you know what i mean. I used a 100g of Amber malt instead of Victory, but i think some recommend Biscuit malt as a replacement for Victory. It's definitely a beer I would make again, but i would try the biscuit malt to see what difference it made.

I use biscuit malt quite a bit and I have to say with the amounts in that recipe, you could skip it without any loss of continuity, especially under all those bigger malts. I like 5% in a blonde ales & IPAs just to give it a bit of extra something. But it is very subtle.

Crystal 120L on the other hand, is completely unique and is a really big, robust malt. It has a fantastic chewy, rich, toffee, raisin flavour. Once you've used it once in your brown ales, milds, porters and so on, you can't go back. Usually it's sold as 'dark crystal malt' in the UK

I tried that technique on my last beer. To the extent all hops were added 15 mins - 0 mins from the end. I loved it.
